Coping mechanism

We remain the laughingstock of the world and the Dutertes and Marcoses and the Arroyos are the clowns who manipulate the Filipinos to perpetuate their greed. What I am worried about is the complacency of the opposition as they remain in their echo chambers, thinking that the echoes are the vox populi. Not so. Talk to the street vendors, the farmers, the fishermen, the vegetable sellers in the urban and rural places. They are voting for Marcos as they lap up all the propaganda crap that radio and GMA Network have been propagating. They do not have access to Internet; if they do, they can’t spend precious pesos on data. They don’t own smart phones; if they do, they may not have the cellular signal for internet. The C, D, E markets comprise the bulk of the electorate. A-B markets are just the small percentage and we often do not reach out to the grassroots.

The fight is in the grassroots.

I no longer have to buy and use charcoal. I’ve been polluting my neighbors’ houses for so long. Whoppeee! And it’s easier to cook. No need to spend 30 mins to an hour trying to keep the embers going.

To cope with the unsavory news stories that keep popping up on my newsfeeds (and I really can’t tune out because I am a journalist), I indulged again and cooked a nice dinner for all of us. The burgers were juicy and nicely smoked.

The burgers were for the girls and Ate C. Mine was a small salmon steak with mashed potato and basil.

It’s easy to disassemble for cleaning. It packs away nicely so this is perfect for camping, together with the other portable stove that I first bought from Sarang Mart. It’s nice to grill chicken, hotdogs and marshmallows here while outside the tent as the sun goes down. I found another camping site where we could go, probably by January or February when it’s cooler and not rainy.

First time in a long time

The government loosened the mobility restrictions to Alert Level 2 in Metro Manila starting yesterday so children can finally go out of homes and visit parks. We went out this afternoon so the girls can ride their bikes here in UPD for the first time in so many months. I still didn’t bike; I’m still gauging my strength so I just walked, did laps, and stretches.

This morning I pulled my lazy butt out of bed to cook brunch. I had been very spoiled by Grab Food for a couple of weekends now so now I must flex my muscles in the kitchen.

I made baked ham with cheese, which I learned from Imamu Room’s cooking vlog on Youtube. Then the usual tamagoyaki, rice with furikake, zucchini tempura, and miso soup.

This is the first time I also used the new microwave oven to defrost the ham. It’s cute but smaller than my old Whirlpool. Oh well, I’m shallow like that.

And yes, Kimchi still hates me. She runs away and hides from me. I still have to endure her grumpiness for a few more days because she needs to complete her antibiotic round, anti-hairball/antacid and the supplements.

Weekends are too short.

Obsolescence

While I was working late yesterday, the PC kept prompting me to restart because of some updates. Then there was a warning sign there that says my system cannot support Windows 11.

Then I checked…The minimum for Windows 11 as far as Core i5 goes is 8th Gen and as you can see mine is 5th Gen. So that means I only have three more years to run this perfectly working gaming laptop on Windows 10 before Microsoft pulls the plug on the support for its old OS. Then I will have to turn this into a Linux machine. I have three years to decide whether I would want to still run Windows (for seamless integration with my company’s system) so that means I have to buy a new laptop or desktop setup or work again with Linux using this machine. The bad thing here is there are some backend stuff by my company that can only be run on Microsoft Edge. Super annoying.

In three years, hopefully the tight supply of computer chips will no longer be a problem and the supply chain for tech will only a memory.

Today I just want to do easy food because I’m lazy. After working my butt off on that problematic story I’ve been chasing the entire week, I guess I deserve a lazy day, no?

I went out and bought some medicines from Mercury and I am now inexplicably tired. Maybe because I didn’t take a nap today at midday. Will have an early night tonight.

Lazy food

Been subscribing to cooking vlogs on Youtube to expand my repertoire. But I still easily get tired so I resorted to lazy cooking today.

I shouldn’t have eaten rice tonight. Now I feel so full and heavy. I normally just eat soup and veggies at night. This one below has fried spring rolls with the veggies.

Another vlog that I religiously follow is Imamu Room, which has a lot of ideas for bento.

Another one is Nami, a vlog that combines cooking and her daily life as a single working girl in Tokyo.

She gives me ideas what to do with vegetables.

This guy, Kominka, shows me several ways to cook seafood and grill other dishes. And what to cook during camping trips. I want to buy a big claypot to cook rice with like his so I can serve fluffy white rice.

Nyangsoop, on the other hand, has hybrid western and Korean dishes, which are easy to follow. I like her utensils.

One of these days I will have the energy to try some of the recipes. As my mom said, Covid really affects you in so many ways you wouldn’t thought it would. She also feels not energetic enough for the usual physical stuff that she normally did before like using the treadmill. We are both on the same boat.

I am now currently waiting for my Zennya massage to arrive. Because I deserve it. My therapists usually wear PPEs so I’m not worried about them.

After this I will zonk out. 😴

Homely activities

I feel stronger today, like my old energy is back so I tackled home cooking today. Or rather I taught my daughter, Twin I, how to make omurice and miso soup.

First she cooked leftover rice that was in the fridge overnight with some leftover tocino and leeks. Normally you put dollops of ketchup in the rice but my kids don’t like ketchup. Photo by CallMeCreation.com.

I also taught her how to make miso soup using soybean paste and kombu or dried kelp. Omurice and and miso soup for brunch today.

Then I felt more energetic than I expected so I tackled my container garden that was already so neglected that it looked like a forest full of detritus and detritus feeders.

First, I tried to save my birds of paradise plant from falling over because it was being pushed down by the neighbor’s trash. Then I’m teaching it to lean the other way. This is already the daughter plant (that grew from a sucker). The mother plant that I bought from my hometown in December died as it was not able to acclimatize in the city. Then I tackled the dried leaves that kept falling from the old mango tree and the soil that was dug up by neighborhood stray cats. I took out the neighbor’s trash that they stuffed between their motorbike and my pots. Annoying really, because there was a lot. I pulled out the dead plants that I neglected and some weeds. The big one at the back is a taro plant. I tried pulling it out to check if there’s already taro but that damned thing was stubborn. The bigger plants at the back are fruit trees that I learned to be lanzones, kaimito and rambutan. And they will all go to my cousin who has a garden. I don’t have a place to transfer my fruit trees from my pot. The wire shelving was pulled out from my laundry area and it was just languishing there. Here are some of the surviving birdseye chilis that I quarantined as some of the other surviving siblings are being attacked by some kind of pest, maybe aphids. At the back planted in some old upside down plastic Coke bottles are some Sansivieria bacularis that I started to propagate. The ones in the water are the other bacularis that I separated from the mother plant that will be transferred to other pots when I have the chance to buy potting soil.
These are the mother Sansivieria bacularis. They started as small plants in small Japanese cups that we bought from Quezon City Circle gardens for PHP 35 each in 2018. They were dying indoors probably because of lack of light so I took them out and transferred them to bigger pots. Look at how they have thrived outdoors. I think this unruly mother plant would have to be thinned out and I propagate the daughters.
I planted seeds of ornamental flowers in these recycled mineral water bottles. These are next to my front windows so when they start to flower, I will be looking at my flowers through my window every morning when I have my breakfast.
Since everyone is stuck at home, my neighbors in the apartment compound also started growing plants in pots and plant boxes. Yup, that’s my bike that I haven’t folded yet. I’ll probably clean and oil that tomorrow.
My neighbors also are growing papaya trees, some Malabar spinach (that vine) and moringa tree. They said I can freely gather the leaves if I want to use them for cooking.

Tomorrow I will be composting some rotten guyabano fruits and cantaloupe that I wasn’t able to eat. I will gather the seeds first and let’s see if I can grow them. My squash died during the non-stop monsoon rains in July and August. Also some neighborhood stray cats started digging into my pots. Next time I will make some trellises so my squash would have somewhere to crawl or attach to.

Later tonight I will be ordering 20 meters of solar-powered fairy lights from Lazada that I will twirl around the mango tree then hang across the container garden towards my apartment’s overhang and hang it loosely there. It would be very pretty every night so my girls and I can sit outside while we grill or just hang out since the heavy rains have already stopped. Plus Christmas is coming soon. I will be ordering more curtain fairy lights to hang against my curtains in my living room window.

Self-love. I’m almost there.

It’s the 14th of August

And we have 14,000 new infections today. Very apt.

To make myself feel better, I tried again the oven and grill feature of my new stove top. Less oily food for us today.

I received some packs of Quorn products from its parent company as part of their relaunch in the Philippines. So for today I baked the vegetarian nuggets while i cooked tamagoyaki on top of the oven.

I haven’t tried grilling steaks on this gas griller and I don’t want to ruin a perfectly seasoned steak. Not yet anyway. But I tried grilling burgers on it last week.

It has been quite a while since my meals have become irregular. Too much work. But it was last week when I realized that I had consistently been eating less in terms of serving and frequency. Only twice a day. I tried fasting yesterday with only milk as my source of nutrition (breakfast). By 4 pm I gave up. I couldn’t go without food. I needed to eat, especially after writing a 1,500-word article.

So if I should attempt again to fast, I should do it on a weekend and not when I am pressured to write epics. 🤦🏻‍♀️

I am distracting myself with cooking because right now I want to kill the DOH secretary. I don’t want to be stressed today with news about him and the COA report. And the mass resignation of healthcare workers.

Meanwhile, the lockdown may be extended given the steady rise in the number of new cases and hospitals operating at maximum capacity. A lot of people are going hungry again. I am in touch with one of the community pantry organizers here and they are now distributing food packs to jeep and tricycle drivers. I’ll see if I can give them a hand during my work leave.
